Recipes with Rob: Summer Peppers

Our dear friend Eriona came over to be our guest chef. She prepared this dish for us one evening at her place and it was SO good we had to have her teach us how to recreate it! This dish is a favorite in Eriona's home country of Albania. She said it has a Greek influence but is prepared all through Albania when the peppers are fresh in the summer.

The only difference in the dish she made us and this dish is the addition of doTERRA Oregano essential oil. Which we all agreed blended very well with the original recipe. Try it out for yourself and let us know what you think!


Here's the recipe:
-5 Roma Tomatoes
-10 Small sweet peppers
-1 Clove of garlic
-Olive oil
-Feta cheese
-4 drops doTERRA Oregano essential oil
-Salt and Pepper


  1. Boil the tomatoes for 5 minutes, peel, and blend/puree to make fresh tomato paste.
  2. Reduce the tomato paste with 1/2 cup of olive oil, garlic clove, salt and pepper on medium to low heat for 15 minutes.
  3. Cut the pepper and place on top of lined cookie sheet.
  4. Broil for 10-15 minutes or until they start to turn golden brown.
  5. Once the peppers are done combine with reduced tomato paste.
  6. Add in Feta Cheese, doTERRA Oregano, and fresh parsley.
  7. Let the mixture continue to cook for approximately five minutes.
  8. Enjoy!
